Ingredients

Scale

Main Protein

  • 1 lb pork shoulder or ground pork
  • 68 fresh potstickers

Slaw

  • 2 cups thinly shredded cabbage
  • 1 cup shredded carrots
  • 2 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp sesame oil

Noodles

  • 6 oz rice noodles or ramen noodles
  • 1 tsp sesame oil (for noodles)

Seasonings & Aromatics

  • 2 cloves fresh garlic, minced
  • 1 tbsp fresh ginger, minced
  • 3 tbsp soy sauce (use tamari for gluten-free)
  • 1 tsp sesame oil (for pork seasoning)

Garnishes & Optional

  • 2 green onions, chopped
  • 1/4 cup fresh cilantro, chopped
  • Chili flakes or sriracha (optional, to taste)

Instructions

  1. Prepare the Pork: Season the pork shoulder or ground pork with minced garlic, minced ginger, soy sauce, and a touch of sesame oil. Cook it in a hot pan over medium-high heat until browned and tender, allowing the aromas to develop, about 8-10 minutes.
  2. Cook the Potstickers: Pan-fry or steam the fresh potstickers according to package instructions until the bottoms are crispy and golden while the insides remain juicy. Set aside and keep warm.
  3. Make the Cabbage Slaw: Thinly shred the cabbage and carrots. Toss them in a dressing made from rice vinegar, honey, and a bit of sesame oil, adjusting to taste to balance tanginess and sweetness. Set aside.
  4. Prepare the Noodles: Boil rice or ramen noodles according to the package directions until tender. Drain and rinse with cold water to stop cooking. Toss the noodles with a teaspoon of sesame oil to prevent sticking and add flavor.
  5. Assemble the Bowl: Place the noodles at the bottom of your serving bowl. Top with the cooked pork and potstickers, then pile on the bright cabbage slaw. Garnish with chopped green onions, cilantro, and, if desired, chili flakes or sriracha for added heat and color.

Notes

  • Don’t overcook potstickers to avoid sogginess; pan-fry just until crispy and heated through.
  • Shred cabbage thinly using a mandoline or sharp knife for best texture and blend.
  • Use fresh garlic and ginger to elevate the pork’s flavor rather than powders or pastes.
  • Taste slaw dressing and adjust vinegar or honey to your preferred balance of tangy and sweet.
  • Add herbs and chili flakes last to keep their flavors fresh and vibrant.
