Quesadilla Base

  • 4 large flour tortillas
  • 1 1/2 cups shredded cheese blend (cheddar and Monterey Jack)
  • 1 tablespoon olive oil or butter

Vegetables (Optional)

  • 1/2 cup diced onion
  • 1/2 cup diced bell peppers
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Prepare the Steak: Season the thinly sliced steak with salt, pepper, cumin, chili powder, and garlic powder. Let it sit for 5 minutes to absorb the flavors while preparing your vegetables.
  2. Cook the Steak and Veggies: Heat a skillet over medium-high heat with a splash of olive oil. Cook the steak until browned and just cooked through, about 3-4 minutes. Remove and set aside. In the same skillet, sauté diced onions and bell peppers until tender and slightly caramelized.
  3. Assemble the Quesadilla: Reduce the heat to medium. Place one tortilla in the pan. Sprinkle a generous layer of shredded cheese over half the tortilla, add cooked steak and sautéed veggies, then top with more cheese. Fold the tortilla over to cover the filling.
  4. Cook Until Crispy: Cook for 2-3 minutes on each side, pressing gently with a spatula until the tortilla turns golden brown and the cheese melts inside. Repeat the process with remaining tortillas and filling.
  5. Serve Warm: Slice each quesadilla into wedges and serve immediately with your preferred sides and garnishes like sour cream, guacamole, or pico de gallo.
