Red Velvet Strawberry Cheesecake

Red Velvet Strawberry Cheesecake is a decadent dessert that combines the rich, velvety flavor of red velvet cake with creamy cheesecake and fresh strawberries. This visually stunning and flavorful dessert is perfect for celebrations or any indulgent treat, featuring an irresistible fusion of textures and tastes that appeal to all dessert lovers.

Ingredients

Main Ingredients

  • Cream Cheese – 24 ounces, softened
  • Red Velvet Cake Mix – 1 box (about 15.25 ounces)
  • Fresh Strawberries – 1 1/2 cups, chopped plus extra for garnish
  • Sour Cream – 1 cup
  • Granulated Sugar – 3/4 cup (adjust if using cake mix with sugar)
  • Eggs – 3 large, at room temperature
  • Vanilla Extract – 2 teaspoons
  • Butter – 4 tablespoons, melted (for crust or cake crumble base)

Instructions

  1. Prepare the Red Velvet Layer: Follow the red velvet cake mix instructions, reducing the sugar slightly to compensate for the sweetness of the cheesecake layer. Mix the batter until smooth and pour it into a springform pan lined with parchment paper to prevent sticking. Bake until the cake is just set, then allow it to cool completely.
  2. Make the Creamy Cheesecake Filling: In a large bowl, whip the softened cream cheese until smooth and fluffy. Gradually add the granulated sugar, eggs, vanilla extract, and sour cream, mixing until fully incorporated but avoid overbeating. Gently fold in the chopped fresh strawberries, reserving some for decoration.
  3. Combine and Bake: Pour the cheesecake filling evenly over the cooled red velvet cake layer. Bake at a slightly lower temperature than usual to help prevent cracking, until the center is almost set but still a little wobbly, maintaining a smooth and creamy texture.
  4. Chill and Decorate: Let the cheesecake cool completely at room temperature before refrigerating it for at least 4 hours or overnight. Just before serving, garnish the top with fresh strawberry slices and optionally dust with powdered sugar or white chocolate shavings for an elegant finish.

Notes

  • Use room temperature cream cheese and eggs for smooth mixing and fewer lumps.
  • Mix just until combined to avoid incorporating too much air, which can cause cracks.
  • Bake using a water bath to maintain moisture and prevent drying edges.
  • Chill thoroughly in the refrigerator so flavors meld and texture firms up.
  • Fresh, ripe strawberries provide the best balance of sweetness and brightness.
