It balances creamy textures with bright citrus flavors, making it a perfect treat for any occasion. This light yet indulgent cake offers a sweet and tangy experience that delights the palate while remaining elegant and simple to prepare.

Ingredients

Scale

Cake Base

  • 3 large eggs
  • 3/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon fresh lemon zest
  • 1 cup all-purpose flour (or gluten-free flour blend for gluten-free option)

Lemon Custard

  • 4 large egg yolks
  • 3/4 cup sugar
  • 1/2 cup fresh lemon juice (about 23 lemons)
  • 1 tablespoon lemon zest
  • 2 cups milk (or almond/oat milk for dairy-free version)
  • 2 tablespoons cornstarch (or all-purpose flour as substitute)
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Lemon Custard: In a saucepan over medium heat, whisk together egg yolks, sugar, lemon juice, and lemon zest. Gradually add the milk mixed with cornstarch while stirring constantly. Cook slowly, stirring continuously until the mixture thickens. Remove from heat and stir in butter and vanilla extract. Allow the custard to cool completely.
  2. Mix the Cake Batter: In a mixing bowl, beat the eggs and sugar together until fluffy and pale. Add melted butter and lemon zest, mixing well. Gently fold in the sifted flour to maintain a light and airy batter.
  3. Bake the Cake Base: Pour the batter into a greased and lined cake pan. Bake in a preheated oven at 350°F (175°C) for approximately 25 minutes or until a toothpick inserted in the center comes out clean. Let the cake cool completely.
  4. Assemble the Cake: Spread the chilled lemon custard evenly over the cooled cake base. Refrigerate the assembled cake for at least 2 hours to allow the custard to set and the flavors to meld.
  5. Serve and Enjoy: Optionally garnish with lemon slices or fresh mint leaves. Slice and serve chilled as a refreshing and elegant dessert.

Notes

  • Use fresh lemons for the best authentic and bright flavor.
  • Fold in the flour gently to avoid deflating the batter and ensure a tender cake.
  • Cook the custard slowly and stir constantly to prevent curdling or lumps.
  • Chill the cake for sufficient time to let the custard properly set.
  • Use a toothpick to test cake doneness to avoid overbaking and drying.
