Ingredients

Scale

Main Ingredients

  • 4 large flour tortillas (soft and flexible)
  • 8 oz thinly sliced corned beef
  • 4 oz Swiss cheese slices
  • 1 cup well-drained sauerkraut
  • 1/2 cup Russian dressing
  • 1 tbsp butter (optional, for toasting)

Instructions

  1. Prepare the Tortillas: Lay your flour tortillas flat on a clean surface. Spread a generous layer of Russian dressing evenly over each tortilla, right up to the edges to ensure every bite is flavorful.
  2. Layer the Ingredients: Place a layer of thinly sliced corned beef over the dressing, then add an even layer of well-drained sauerkraut. Finally, add the slices of Swiss cheese to cover the fillings nicely.
  3. Roll Tightly: Starting at one edge, roll the tortilla up tightly, pressing gently to keep everything compact. Wrap it in plastic wrap and refrigerate for at least 30 minutes to help the pinwheels hold their shape.
  4. Slice into Pinwheels: Remove the plastic wrap and use a sharp knife to cut the rolled tortillas into 1-inch thick pinwheels. Arrange them on a serving platter with the colorful layers on display.
  5. Toasting (Optional): If you prefer warm pinwheels, lightly butter a skillet and toast each pinwheel on low heat until the cheese is melted and the outside is golden brown.

Notes

  • Drain sauerkraut well to prevent sogginess.
  • Chill rolled tortillas before slicing for clean, firm pinwheels.
  • Use a sharp knife when cutting to avoid squishing the pinwheels.
  • Adjust the amount of Russian dressing to your preferred tanginess and creaminess.
  • For smaller bites, use mini tortillas, ideal for parties or kid-friendly servings.
