Roasted Carrots with Tahini Sauce

Roasted Carrots with Tahini Sauce is a simple yet flavorful dish combining the natural sweetness of caramelized roasted carrots with a creamy, nutty tahini sauce. Perfect as a side, appetizer, or wholesome snack, this recipe is healthy, versatile, and easy to customize for various dietary preferences.

Ingredients

Scale

For the Roasted Carrots

  • 1 lb fresh carrots, peeled and sliced into sticks or rounds
  • 2 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/2 tsp ground cumin

For the Tahini Sauce

  • 1/4 cup tahini
  • 2 tbsp fresh lemon juice
  • 1 clove garlic, minced
  • Pinch of sea salt
  • 24 tbsp water (adjust for desired consistency)

Optional Garnishes

  • Chopped fresh parsley or cilantro
  • Toasted sesame seeds or crushed pistachios
  • Lemon zest

Instructions

  1. Prepare the Carrots: Wash and peel the carrots, then slice them evenly into sticks or rounds depending on your preference. This ensures they cook uniformly and roast to a perfect tenderness with caramelized edges.
  2. Season and Roast: Toss the carrots with olive oil, sea salt, and ground cumin until well-coated. Spread them evenly on a baking sheet and roast in a preheated oven at 400°F (200°C) for about 25-30 minutes. Flip halfway through to encourage even caramelization.
  3. Make the Tahini Sauce: While the carrots roast, whisk together tahini, fresh lemon juice, minced garlic, a pinch of sea salt, and water. Adjust the water to achieve a smooth, pourable consistency that’s creamy but not too thick.
  4. Plate and Drizzle: Once the carrots are roasted to a tender and caramelized perfection, arrange them on a serving dish. Drizzle the tahini sauce generously over the top. Sprinkle chopped parsley or cilantro for a fresh finish if desired.

Notes

  • Cut carrots uniformly to ensure consistent roasting and avoid uneven texture.
  • Roast at a higher temperature (400°F/200°C) to get lovely caramelization without drying out the carrots.
  • Always use fresh lemon juice for the tahini sauce to keep the flavor bright and vibrant.
  • Add water gradually to the tahini sauce to avoid making it too runny or too thick.
  • Let the carrots rest a few minutes after roasting to let the flavors develop fully before adding the sauce.
