Ingredients

Scale

Salad Ingredients

  • 2 medium sweet potatoes, peeled and cut into bite-sized cubes
  • 4 cups baby spinach or mixed greens
  • 1/2 medium red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/3 cup toasted pecans or walnuts
  • 2 tbsp fresh parsley or cilantro, chopped
  • Salt and freshly ground black pepper, to taste

Honey Dijon Dressing

  • 2 tbsp Dijon mustard
  • 1 1/2 tbsp honey
  • 1 tbsp apple cider vinegar
  • 3 tbsp olive oil
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare and Roast the Sweet Potatoes: Preheat your oven to 425°F (220°C). Peel and cut the sweet potatoes into bite-sized cubes. Toss them in olive oil, salt, and pepper, then spread evenly on a baking sheet. Roast for 25 to 30 minutes, flipping once halfway through, until tender and caramelized with a slightly crisp exterior.
  2. Make the Honey Dijon Dressing: While sweet potatoes roast, whisk together Dijon mustard, honey, apple cider vinegar, olive oil, salt, and pepper in a small bowl. Adjust sweetness or acidity to taste, creating a bright, tangy dressing that complements the roasted sweet potatoes.
  3. Assemble the Salad: In a large bowl, combine the roasted sweet potatoes, baby spinach or mixed greens, thinly sliced red onion, crumbled feta cheese, and toasted nuts. Drizzle the honey Dijon dressing over the ingredients and toss gently to coat everything evenly with the dressing.
  4. Add Fresh Herbs and Serve: Sprinkle freshly chopped parsley or cilantro over the salad for a refreshing aroma and brightness. Serve immediately for best texture or chill for 30 minutes if you prefer it cold.

Notes

  • Choose firm sweet potatoes free of soft spots to avoid mushy pieces.
  • Cut sweet potatoes into uniform cubes for even roasting and caramelization.
  • Lightly toast nuts to enhance their flavor and crunch.
  • If dressing is too thick, add a splash of water or lemon juice to thin it.
  • Serve the salad fresh for optimal flavor and texture; chilling briefly is fine but do not store dressed for too long to avoid wilted greens.
  • Leftover salad and dressing should be stored separately in airtight containers in the refrigerator for up to 3 days.
