Ingredients

Scale

Turkey and Seasoning

  • 1 boneless skin-on turkey breast (about 2 to 3 pounds)
  • 2 tablespoons olive oil or melted butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh sage, chopped

Gravy

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour (or cornstarch for gluten-free)
  • 2 cups chicken broth or stock
  • Salt and black pepper to taste

Instructions

  1. Prepare the Turkey Breast: Pat the turkey breast dry with paper towels to ensure crispy skin. Rub olive oil or melted butter evenly over the skin, then season generously with salt, pepper, garlic powder, onion powder, and chopped fresh herbs. Let it rest briefly to allow flavors to penetrate.
  2. Roast the Turkey: Preheat oven to 375°F (190°C). Place the turkey breast skin-side up in a roasting pan or oven-safe skillet. Roast for 50-60 minutes, or until a meat thermometer inserted into the thickest part reads 165°F (74°C). Baste occasionally with the pan juices to keep it moist.
  3. Rest the Turkey: Remove from oven and let the turkey breast rest for 10-15 minutes to allow the juices to redistribute, ensuring tender, juicy slices when carving.
  4. Make the Gravy: While the turkey rests, place the roasting pan on medium heat. Add butter and whisk in flour (or cornstarch) to create a roux. Gradually whisk in chicken broth until the gravy is smooth and reaches your desired thickness. Season with salt and pepper to taste.
  5. Serve: Slice the roasted turkey breast against the grain into thin, even pieces. Pour the rich gravy over the meat and serve immediately for best flavor and texture.

Notes

  • Dry the skin well before seasoning to ensure crispiness.
  • Use a meat thermometer for perfectly cooked turkey.
  • Rest turkey after roasting to keep it juicy and tender.
  • Save pan drippings for a flavorful homemade gravy.
  • Adjust gravy seasoning gradually to achieve balanced taste.
