Rotisserie Chicken Casserole

Rotisserie Chicken Casserole is a comforting, quick, and versatile dish combining tender shredded rotisserie chicken with creamy sauces, vegetables, pasta or rice, and a crispy topping. Ideal for weeknights or feeding a crowd, it offers a satisfying meal with rich flavors, easy customization, and excellent reheating qualities.

Ingredients

Scale

Chicken and Base

  • 1 rotisserie chicken, shredded (about 3 cups)
  • 2 cups cooked pasta or rice

Vegetables

  • 1 to 1 ½ cups mixed vegetables (fresh or frozen, such as peas, carrots, green beans, broccoli)

Sauce and Cheese

  • 1 can (10.5 oz) cream of mushroom or chicken soup
  • 1 to 1 ½ cups shredded sharp cheddar or mozzarella cheese
  • 1 to 2 teaspoons fresh or dried herbs (parsley, thyme, garlic powder)
  • Salt and pepper, to taste

Topping

  • ½ cup breadcrumbs or cracker crumbs
  • ½ cup shredded cheese (optional, for topping)

Instructions

  1. Prep the Chicken and Base: Shred the rotisserie chicken into bite-sized pieces. Cook your choice of pasta or rice according to package directions, drain well, and set aside for layering.
  2. Make the Creamy Sauce: In a large bowl, combine the cream of mushroom or chicken soup with shredded cheese, herbs, and seasonings. Stir until smooth and creamy to create a flavorful binding sauce.
  3. Combine Ingredients: Mix the shredded chicken, cooked pasta or rice, and mixed vegetables into the creamy sauce. Ensure all ingredients are evenly coated for consistent flavor in each bite.
  4. Assemble the Casserole: Transfer the mixture to a greased baking dish, spreading it out evenly. Sprinkle breadcrumbs or cracker crumbs over the top, followed by extra shredded cheese to create a crispy, golden crust after baking.
  5. Bake Until Golden: Preheat the oven to 350°F (175°C). Bake the casserole for 25 to 30 minutes until the top is bubbly and golden brown, and the filling is warm and creamy inside.

Notes

  • Use high-quality rotisserie chicken for richer flavor.
  • Under-cook pasta slightly to avoid mushiness after baking.
  • Add fresh herbs like parsley or thyme just before baking to enhance freshness.
  • Use crunchy toppings like panko or crushed crackers for texture contrast.
  • Adjust salt and pepper carefully since rotisserie chicken and canned soup can be salty.
