Instructions

  1. Prepare the Sushi Rice: Cook the sushi rice according to package instructions. While still warm, season it with rice vinegar, sugar, and salt. Stir gently and allow the rice to cool slightly to achieve the sticky texture needed for assembling the bake.
  2. Cook the Salmon: Lightly season the salmon with salt and pepper. Bake or pan-sear until just cooked through and flaky, usually about 10-12 minutes at 375°F (190°C). Let it cool, then break into bite-sized chunks.
  3. Layer the Bake: Grease a casserole dish and spread the seasoned sushi rice evenly across the bottom. Mix the cooked salmon, crab meat, and mayonnaise together, then spread this creamy seafood mixture evenly on top of the rice layer.
  4. Add Cheese and Bake: Sprinkle shredded cheese evenly over the top of the layered seafood and rice. Place the dish in an oven preheated to 375°F (190°C) and bake for about 15 minutes or until the cheese is bubbly and lightly golden brown.
  5. Garnish and Serve: Remove from oven and garnish with sliced green onions, a drizzle of soy or teriyaki sauce, and optional masago or tobiko. Serve warm alongside desired sides.
