Sausage French Toast Roll-Ups

Sausage French Toast Roll-Ups are a quick and delicious breakfast combining savory sausage wrapped inside soft, cinnamon-spiced French toast. Perfect for busy mornings or weekend brunch, these roll-ups offer a flavorful and satisfying start with simple ingredients and minimal prep.

Ingredients

Scale

Sausage Filling

  • 1/2 pound ground breakfast sausage (choose your favorite type)

Bread and Coating

  • 6 slices white bread, crusts removed
  • 2 large eggs
  • 1/4 cup milk
  • 1 teaspoon ground cinnamon
  • 1 tablespoon sugar

For Cooking

  • 2 tablespoons butter or oil for frying

Optional

  • Maple syrup for drizzling or dipping
  • Shredded cheddar or mozzarella cheese (for cheese stuffed variation)

Instructions

  1. Prepare the Sausage Filling: Cook the ground sausage in a skillet over medium heat until browned and fully cooked, breaking it apart as it cooks. Drain any excess fat and set aside to cool slightly.
  2. Prepare the Bread: Remove the crusts from each slice of bread. Using a rolling pin, flatten each slice gently to make rolling easier without tearing the bread.
  3. Make the Egg Mixture: In a shallow bowl, whisk together the eggs, milk, cinnamon, and sugar until the mixture is smooth and fully combined. This will coat the roll-ups before cooking.
  4. Assemble the Roll-Ups: Spoon a line of the cooked sausage onto one end of each flattened bread slice. If desired, add shredded cheese on top of the sausage. Roll the bread tightly around the filling, pressing gently to seal the edge.
  5. Cook the Roll-Ups: Dip each roll-up thoroughly in the egg mixture, ensuring all sides are coated. Heat butter or oil in a skillet over medium heat. Cook the roll-ups, turning frequently, until all sides are golden brown and heated through, about 3-4 minutes per side.
  6. Serve: Remove the roll-ups from the skillet and let them cool slightly. Drizzle with maple syrup or serve with your favorite dipping sauce.

Notes

  • Use fresh bread for easier rolling and less tearing.
  • Don’t overfill with sausage to prevent messy roll-ups.
  • Seal edges firmly to avoid leaking filling during cooking.
  • Cook on medium heat to avoid burning while ensuring the inside is cooked.
  • Let roll-ups rest briefly before serving to set their shape and prevent burns.
