  • 12 oz smoked sausage (kielbasa, Andouille, or your favorite variety), sliced into bite-sized pieces
  • 9 oz cheese tortellini (fresh or frozen)

Vegetables

  • 1 cup red bell peppers, sliced into strips
  • 1 cup yellow bell peppers, sliced into strips
  • 1 medium red onion, cut into wedges
  • 3 cloves garlic, minced

Seasonings & Oils

  • 2 tbsp olive oil, divided
  • 1 tsp dried Italian herbs (basil, oregano, thyme blend)
  • Salt, to taste
  • Black pepper, to taste
  • Parmesan cheese, freshly grated (optional, for garnish)

Instructions

  1. Prepare Your Ingredients: Preheat the oven to 400°F (200°C). Slice smoked sausage into bite-sized pieces, chop bell peppers into strips, cut the red onion into wedges, and mince the garlic.
  2. Toss Vegetables and Sausage: In a large bowl, combine the smoked sausage, bell peppers, red onion, garlic, 1 tablespoon olive oil, dried Italian herbs, salt, and pepper. Toss thoroughly so everything is evenly coated with oil and seasoning.
  3. Roast on the Sheet Pan: Spread the mixture in a single layer on a rimmed baking sheet. Roast in the oven for about 15 minutes, allowing the sausage to brown and vegetables to soften and caramelize.
  4. Add Tortellini and Continue Roasting: Remove the sheet pan carefully, nestle the cheese tortellini among the sausage and vegetables, drizzle with the remaining olive oil, and gently toss. Return to the oven and roast for another 8–10 minutes until tortellini are tender and slightly golden.
  5. Finish and Serve: Optionally sprinkle freshly grated Parmesan cheese over the top and let it melt from the residual heat. Serve immediately to enjoy the dish at its best.
