Ingredients

Scale

Main Ingredients

  • 1 lb fresh shrimp, peeled and deveined
  • 1 lb asparagus spears, trimmed and cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 2 tablespoons fresh lemon juice
  • Salt, to taste
  • Black pepper, to taste
  • Red pepper flakes, optional and to taste

Garnishes (Optional)

  • Fresh herbs (parsley or dill), chopped
  • Grated Parmesan cheese
  • Lemon wedges

Instructions

  1. Prep Your Ingredients: Rinse the shrimp and asparagus. If needed, peel and devein the shrimp. Cut the asparagus into 2-inch pieces. Mince the garlic and squeeze fresh lemon juice, keeping it ready for assembling.
  2. Assemble the Foil Packets: Lay out large sheets of aluminum foil on your workspace. Divide the shrimp and asparagus evenly among the foil pieces. Drizzle olive oil over the ingredients, sprinkle the minced garlic, then season with salt, pepper, and optional red pepper flakes. Drizzle fresh lemon juice on top to brighten the flavors.
  3. Seal and Cook: Fold the edges of the foil tightly to create sealed packets. Place the packets on a preheated grill over medium heat or in an oven set to 400°F (200°C). Cook for 12-15 minutes, or until the shrimp turn pink and opaque, and the asparagus is tender but still crisp.
  4. Serve and Garnish: Carefully open the foil packets to avoid steam burns. Sprinkle freshly chopped herbs over the top and serve immediately. Optionally, add grated Parmesan or lemon wedges on the side for an extra flavor boost.

Notes

  • Use fresh shrimp for best flavor and texture; thawed frozen shrimp works well too.
  • Avoid overcooking shrimp as they cook quickly and can become rubbery.
  • Use a double layer of foil for sturdier packets that won’t leak juices while cooking.
  • Spread ingredients evenly inside foil packets to ensure even cooking.
  • Customize citrus flavors by adding lemon zest or orange slices inside the packets.
