Ingredients

Scale

Main Ingredients

  • 1 lb smoked sausage (kielbasa or andouille), sliced into rounds
  • 1.5 lbs red or Yukon gold potatoes, washed and cut into bite-sized pieces
  • 1 bell pepper, chopped into chunks
  • 1 medium onion, chopped into chunks
  • 3 cloves garlic, minced
  • 2 tbsp olive oil

Seasonings

  • 1 tsp smoked paprika
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1 tsp Italian herbs (dried mix of oregano, basil, thyme)

Optional Variations

  • 1 zucchini, sliced (optional vegetable boost)
  • 1/2 cup cherry tomatoes (optional vegetable boost)
  • 1 cup mushrooms, sliced (optional vegetable boost)
  • 1 diced jalapeño or 1/4 tsp cayenne pepper (for spicy kick)
  • 1/2 cup shredded cheddar or mozzarella cheese (for cheesy twist)
  • Fresh herbs (rosemary, thyme, parsley) for garnish or seasoning swaps
  • Cauliflower florets as a low-carb potato substitute

Instructions

  1. Prep the Ingredients: Wash and cut the potatoes into bite-sized pieces. Slice the smoked sausage into rounds. Chop the bell peppers and onion into similarly sized chunks. Mince the garlic to evenly distribute its flavor.
  2. Toss with Oil and Seasonings: In a large mixing bowl, combine the potatoes, sausage, bell peppers, onion, and garlic. Drizzle with olive oil and sprinkle smoked paprika, salt, black pepper, and Italian herbs. Toss until all ingredients are well coated.
  3. Arrange on a Baking Sheet: Spread the mixture evenly on a parchment-lined baking sheet or shallow baking dish in a single layer to ensure even roasting and crispiness.
  4. Bake Until Golden and Tender: Bake in a preheated oven at 400°F (200°C) for 25–30 minutes. Stir halfway through cooking to promote even browning. Potatoes should be tender and sausage slightly crisped at edges.
  5. Serve and Enjoy: Toss gently once out of the oven. Taste and adjust seasoning if needed. Serve warm directly from the pan or plated with desired garnishes or sides.

Notes

  • Chop potatoes and sausage into similar sizes for even cooking.
  • Preheat the oven to ensure better roasting and caramelization.
  • Choose high-quality smoked sausage for the best flavor.
  • Do not overcrowd the pan; spread ingredients out to roast rather than steam.
  • Stir midway through baking to prevent sticking and ensure even browning.
  • No need to peel potatoes; skins add texture and nutrients.
  • To make vegan, use plant-based sausage alternatives.
  • Substitute smoked paprika with regular paprika plus a pinch of cumin or chipotle powder if unavailable.
  • Leftovers keep up to 3 days refrigerated or freeze for 2 months.
  • Reheat in a 350°F oven for 10–15 minutes or in a skillet over medium heat to retain texture.
