  • 1 avocado or 1/2 cup guacamole

Instructions

  1. Prepare the Chicken: Marinate the chicken breasts with southwestern seasoning, olive oil, and lime juice for at least 15 minutes to infuse bold flavors. Then grill or cook the chicken on a grill pan or skillet over medium heat for 5-7 minutes per side until fully cooked and nicely charred.
  2. Prep the Veggies and Beans: While the chicken cooks, rinse and drain black beans and corn. Dice the tomatoes, chop the lettuce, and roughly chop fresh cilantro to sprinkle over the wrap later.
  3. Warm the Tortillas: Gently heat tortillas in a dry skillet or microwave for 15-20 seconds to soften them, making them easier to fold without cracking.
  4. Assemble the Wrap: Lay a warmed tortilla flat and layer lettuce, diced tomatoes, black beans, corn, and shredded cheese. Slice the cooked chicken and place it on top. Add avocado or guacamole and drizzle with sour cream or Greek yogurt. Finish by sprinkling fresh cilantro over the fillings.
  5. Roll and Serve: Fold in the sides of the tortilla and roll tightly from one end to the other to enclose all the fillings. Slice the wrap in half if desired, and serve immediately.
