Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • Salt, to taste
  • Black pepper, to taste
  • Fresh or dried herbs (thyme or parsley), to taste

Vegetables & Aromatics

  • 2 cups fresh spinach
  • 8 oz cremini or button mushrooms, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced

Sauce & Cooking Fats

  • 1 cup chicken broth
  • 1 cup heavy cream or Greek yogurt
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon butter

Seasonings

  • Salt, to taste
  • Black pepper, to taste
  • Fresh thyme or parsley, chopped, for garnish

Instructions

  1. Prepare and Season the Chicken: Pat the chicken breasts dry with paper towels. Season generously with salt, black pepper, and your choice of herbs such as thyme or parsley to ensure maximum flavor absorption before cooking.
  2. Sear the Chicken: Heat olive oil and butter in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-6 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Sauté the Aromatics and Mushrooms: Reduce heat to medium. In the same skillet, add diced onions and minced garlic. Sauté until the onions are translucent and fragrant, about 2-3 minutes. Add the sliced mushrooms and cook until they release their moisture and turn golden brown.
  4. Create the Creamy Sauce: Pour in chicken broth to deglaze the pan, scraping up any browned bits on the bottom. Stir in heavy cream and grated Parmesan cheese, continuously stirring until the sauce thickens slightly and becomes smooth.
  5. Add Spinach and Combine: Fold fresh spinach into the sauce, allowing it to wilt gently. Return the seared chicken breasts to the skillet, nestling them into the sauce. Simmer for a few minutes so the flavors meld and the chicken remains juicy and tender.

Notes

  • Don’t overcrowd the pan when searing chicken to achieve a golden crust rather than steaming.
  • Use fresh mushrooms for better flavor and texture compared to canned.
  • Control sauce thickness by simmering longer or adding a corn starch slurry if needed.
  • Let the chicken rest a few minutes after cooking to keep it juicy.
  • Adjust seasoning at the end by tasting the sauce before serving and adding more salt or pepper if needed.
