Steak and Pasta Recipes

A quick, versatile, and satisfying dish that pairs tender, juicy steak with perfectly cooked pasta in flavorful sauces. Ideal for weeknights or special occasions, this recipe offers rich flavors and comforting textures with minimal ingredients and simple steps.

Ingredients

Steak

  • Flank or ribeye steak, well-marbled (approximately 8-12 oz)

Pasta

  • Spaghetti, fettuccine, or penne pasta (8 oz)

Oils & Seasonings

  • Extra virgin olive oil (2-3 tablespoons)
  • Fresh garlic cloves, minced (2-3 cloves)
  • Salt, to taste
  • Black pepper, to taste
  • Red chili flakes (optional, to taste)

Herbs & Cheese

  • Fresh basil, parsley, or rosemary (2 tablespoons, chopped)
  • Grated Parmesan cheese (¼ cup)

Optional Sauce

  • Creamy Alfredo sauce or tomato-based sauce (½ to 1 cup, depending on preference)

Optional Variations

  • Pesto or garlic butter as alternative sauces
  • Sautéed mushrooms, spinach, or cherry tomatoes (½ cup, optional)
  • Zucchini noodles or shirataki noodles (as low-carb pasta substitutes)
  • Cheese alternatives: Pecorino Romano or Asiago (¼ cup)

Instructions

  1. Prepare the Steak: Season the steak generously with salt, pepper, and any preferred spices. Heat extra virgin olive oil in a skillet over medium-high heat. Sear the steak for 3-4 minutes per side, adjusting for thickness and desired doneness. Once cooked, let the steak rest for several minutes before slicing thinly against the grain to maintain tenderness.
  2. Cook the Pasta: While the steak rests, bring a large pot of salted water to a boil. Add your chosen pasta and cook according to package instructions until al dente. Drain the pasta and reserve a small cup of pasta water for later.
  3. Make the Sauce: In the skillet used for cooking the steak, reduce the heat to medium-low. Add minced garlic sautéed briefly in olive oil until fragrant. Pour in your sauce of choice—whether it is tomato-based, Alfredo, or a light olive oil and herb blend. Let the sauce simmer gently, thickening slightly. Use reserved pasta water to adjust consistency as needed.
  4. Combine Everything: Add the cooked pasta to the skillet with the sauce, tossing to coat evenly. Gently fold in the sliced steak, allowing its juices to mingle with the pasta and sauce. Finish by sprinkling fresh herbs and grated Parmesan cheese over the top just before serving.

Notes

  • Resting the steak after cooking preserves juiciness and tenderness.
  • Reserve pasta water to loosen and enhance sauce texture without diluting flavors.
  • Slicing steak against the grain ensures tender and easy-to-chew pieces.
  • Cook pasta al dente for the best texture and flavor contrast.
  • Use fresh, high-quality ingredients to elevate simple dishes.
