Scale

Dough Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons instant yeast
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 3/4 cup warm water or warm milk
  • 1/2 teaspoon baking powder
  • 2 tablespoons vegetable oil or shortening

Instructions

  1. Prepare the Dough: Combine the all-purpose flour, sugar, salt, and instant yeast in a large bowl. Gradually add warm water or milk while stirring to form a soft dough. Knead for about 10 minutes until smooth and elastic. Cover with a damp cloth and let it rise in a warm area for about 1 hour or until doubled in size.
  2. Punch Down and Rest: Gently punch down the risen dough to release air bubbles. Cover again and let it rest for 15-20 minutes to relax the gluten, making shaping easier.
  3. Shape the Buns: Divide the dough into even portions and roll each into a smooth ball. Flatten each slightly before adding any filling, then carefully fold the edges over and pinch to seal tightly.
  4. Second Rise: Place the shaped buns on parchment paper squares to prevent sticking. Cover loosely and let them rise for another 30-45 minutes until puffy and light.
  5. Steam the Buns: Bring water to a rolling boil in a steamer. Place buns in the steamer basket with space between each to allow expansion. Steam over medium heat for 12-15 minutes without lifting the lid to maintain temperature and moisture.
  6. Cool and Serve: Turn off the heat and let the buns sit covered for 5 minutes before removing to prevent sudden shrinkage. Serve warm for the best soft and fluffy texture.

Notes

  • Use room temperature ingredients to help yeast activate evenly and produce consistent dough texture.
  • Do not over-knead; knead just until the dough is smooth and elastic to avoid tough buns.
  • Keep the dough covered at every resting and rising stage to prevent drying out.
  • Control steaming temperature by using medium heat to prevent buns from cracking or becoming soggy.
  • Let buns rest briefly after steaming to allow interior moisture to redistribute for enhanced softness.
  • Use parchment paper or lightly oil the steamer basket to prevent buns from sticking.
