Strawberry Chia Pudding

Strawberry Chia Pudding is a creamy, nutritious, and easy-to-make snack combining fresh strawberries, omega-3-rich chia seeds, and milk to create a smooth, fiber-packed pudding. Perfect for breakfast, dessert, or a healthy snack, it’s naturally gluten-free, vegan-friendly, and highly customizable to suit any diet or occasion.

Ingredients

Scale

Base Ingredients

  • 1 cup fresh strawberries, chopped or pureed
  • 3 tablespoons chia seeds
  • 1 cup milk of choice (dairy or plant-based such as almond, oat, or coconut)

Optional Additions

  • 12 teaspoons sweetener (maple syrup, honey, or agave), optional
  • 1/2 teaspoon vanilla extract, optional

Instructions

  1. Prep the Strawberries: Wash and hull fresh strawberries thoroughly, then chop them into small pieces or blend them into a puree for a smooth consistency.
  2. Mix Ingredients Together: In a bowl or jar, combine chia seeds, your chosen milk, sweetener (if using), and vanilla extract. Stir well to prevent clumps.
  3. Add Strawberries: Either fold in the chopped strawberries gently or swirl in the pureed strawberries to infuse the pudding with fresh berry flavor.
  4. Refrigerate Overnight: Cover the mixture and place it in the refrigerator for at least 4 hours, preferably overnight, allowing chia seeds to fully absorb the liquid and form a pudding-like consistency.
  5. Serve and Enjoy: Give the pudding a good stir before serving and top with extra fresh strawberries or your favorite garnish.

Notes

  • Stir the mixture several times within the first 10 minutes to prevent chia seeds from clumping.
  • Use ripe, sweet strawberries to reduce or eliminate the need for added sweetener.
  • Adjust thickness by adding more milk for a thinner pudding or more chia seeds for a thicker texture.
  • Make the pudding the night before to save time and ensure perfect texture.
  • Experiment with different plant-based milks for varied flavor and creaminess.
  • Store leftovers covered in the refrigerator for up to 4-5 days; stir before serving.
  • Freezing is possible but may alter texture; thaw overnight in the fridge before eating.
  • Best served cold or at room temperature; gently warm if desired.
