Instructions

  1. Prepare the Crunchy Base: Melt 4 tablespoons of butter and mix with 1 cup of graham cracker crumbs until combined. Press this mixture firmly into a lined pan or into small silicone molds to create a solid base layer.
  2. Make the Cheesecake Filling: In a bowl, beat softened cream cheese with granulated sugar and vanilla extract until smooth and silky. In a separate bowl, whip the heavy cream to stiff peaks, then gently fold it into the cream cheese mixture until light and airy.
  3. Assemble the Bites: Spoon or pour the cheesecake filling evenly over the prepared graham cracker base, smoothing the tops. Refrigerate for at least 2 hours, or until the filling is firm and set.
  4. Add Fresh Strawberries and Crunchy Topping: Once set, top each cheesecake bite with fresh strawberry slices. Mix the remaining 1/2 cup graham cracker crumbs with 2 tablespoons melted butter and sprinkle this crunchy topping over the strawberries for extra texture.
  5. Chill and Serve: Return the assembled bites to the refrigerator to chill further, allowing flavors to meld. Serve cool, optionally dusted with powdered sugar or garnished with fresh mint leaves.
