Ingredients

Scale

Bell Peppers Base

  • 4 large bell peppers (red, green, yellow, or orange)

Filling

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 1 cup mushrooms, chopped
  • 2 cloves garlic, minced
  • 1 pound Italian sausage
  • 1 cup pizza sauce
  • 1/4 cup black olives, sliced
  • 1 teaspoon Italian seasoning

Topping

  • 1 to 1 1/2 cups shredded mozzarella cheese

Instructions

  1. Prepare the Peppers: Slice the tops off the bell peppers, remove seeds and membranes to create hollow boats. Lightly blanch peppers in boiling water for 3-4 minutes until slightly softened, then drain.
  2. Cook the Filling: Heat olive oil in a skillet over medium heat. Sauté diced onion, green peppers, mushrooms, and garlic until softened, about 5 minutes. Add Italian sausage and cook until browned and cooked through. Stir in pizza sauce, black olives, and Italian seasoning, simmering for 3-5 minutes to blend flavors.
  3. Stuff the Peppers: Spoon the sausage and vegetable filling generously into each pepper, filling up to just below the rim. Top each pepper with a generous layer of shredded mozzarella cheese.
  4. Bake to Perfection: Arrange stuffed peppers upright in a baking dish. Cover loosely with foil and bake at 375°F (190°C) for 25 minutes. Remove foil and bake uncovered for an additional 10 minutes, or until cheese is golden and bubbly.
  5. Serve and Enjoy: Let peppers rest a few minutes after baking. Serve warm with optional fresh herbs or dipping sauces for a hearty and satisfying meal.

Notes

  • Choose firm, large bell peppers that can stand upright to hold the filling effectively.
  • Do not overfill peppers to prevent cheese from spilling and burning during baking.
  • Sprinkle fresh basil or parsley on top just before serving for added freshness.
  • Adjust cheese amounts based on your preference for a lighter or cheesier crust.
  • Cover peppers while baking to keep them moist and ensure even cooking.
