  • 2 tbsp sriracha (adjust to taste)
  • 2 tsp furikake seasoning
  • Salt and pepper to taste

Fresh Toppings & Garnishes

  • 2 green onions, finely chopped
  • Optional: crushed nori sheets or seaweed flakes for garnish
  • Optional: soy sauce or tamari for drizzling or dipping

Instructions

  1. Prepare the Rice: Cook sushi rice according to package instructions. While still warm, season it evenly with rice vinegar, sugar, and salt. Gently fluff the rice to combine flavors and set aside.
  2. Cook the Salmon: Lightly season the salmon fillets with salt and pepper. Bake in a preheated oven at 350°F (175°C) for 10-12 minutes or pan-sear until just cooked through. Flake the cooked salmon into bite-sized pieces.
  3. Assemble the Sushi Bake Layers: Spread the seasoned sushi rice evenly in the bottom of a baking dish. Layer the flaked salmon evenly over the rice. In a small bowl, mix mayonnaise with sriracha to make a spicy mayo, then spread this mixture generously over the salmon layer.
  4. Add Toppings and Bake: Sprinkle furikake seasoning and chopped green onions over the top layer. Place the baking dish in the preheated oven and bake for 10-15 minutes, until the edges bubble and the topping is lightly browned.
  5. Serve and Enjoy: Remove from the oven and garnish with crushed nori or seaweed flakes if desired. Serve warm, scooping portions onto plates or sharing family-style with soy sauce and pickled ginger on the side.
