Ingredients

Scale

Salmon

  • 4 fresh salmon fillets (wild-caught if possible)
  • Salt, to taste
  • Black pepper, to taste
  • 12 tbsp olive oil

Peach Bourbon Glaze

  • 2 ripe peaches, finely chopped
  • 1/4 cup bourbon
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tbsp fresh lemon juice

Garnish

  • 2 tbsp fresh herbs (thyme, parsley, or your choice), chopped

Instructions

  1. Prepare the Peach Bourbon Glaze: Finely chop the fresh peaches and combine them with bourbon, brown sugar, minced garlic, and lemon juice in a small saucepan. Simmer gently over low heat until the mixture thickens into a glossy, fragrant glaze.
  2. Season the Salmon: Pat the salmon fillets dry with paper towels. Season both sides generously with salt and black pepper to enhance the natural flavor of the fish.
  3. Sear the Salmon: Heat olive oil in a skillet over medium-high heat. Place the salmon fillets skin-side down and cook for 3-4 minutes until the skin is crispy and golden. Flip the fillets and cook the other side for 2-3 minutes.
  4. Add the Glaze and Finish Cooking: Pour the prepared peach bourbon glaze over the salmon in the pan. Let it bubble and coat the fish as it finishes cooking for an additional 2-3 minutes, allowing the glaze to caramelize slightly and lock in rich flavors.
  5. Garnish and Serve: Remove the salmon from heat. Sprinkle with chopped fresh herbs and serve immediately with your favorite sides.

Notes

  • Use fresh peaches for the best texture and flavor; frozen peaches may water down the glaze.
  • Do not overcook the salmon; aim for medium doneness to keep it flaky and moist.
  • Simmer the glaze on low heat to prevent burning the sugar.
  • Prepare all glaze ingredients in advance for a smooth cooking process.
  • Let the cooked salmon rest briefly off the heat to allow juices to redistribute.
