Sweet Potato Crescent Bites

Sweet Potato Crescent Bites are a quick and easy snack combining the natural sweetness of roasted sweet potatoes with the flaky, buttery crescent roll dough. Perfect as appetizers or light treats, these bites deliver a balanced flavor of sweet and savory in every golden, crispy bite.

  • 2 medium sweet potatoes, peeled, chopped, and roasted
  • 2 tablespoons butter, softened
  • Salt, to taste
  • Black pepper, to taste
  • Optional: 1/4 teaspoon cinnamon and/or nutmeg for warmth

Dough & Topping

  • 1 package crescent roll dough (8 oz)
  • 2 tablespoons melted butter for brushing

Instructions

  1. Prepare the Sweet Potatoes: Wash, peel, and chop sweet potatoes into cubes. Roast at 400°F (200°C) for about 20 minutes until tender. Cool slightly, then mash with butter, salt, pepper, and optional spices to create the filling.
  2. Preheat and Prepare Dough: Preheat oven to 375°F (190°C). Roll out crescent dough on a clean surface and separate into triangular segments.
  3. Assemble the Bites: Place about a tablespoon of sweet potato mixture near the wider end of each triangle. Roll dough from wide end toward the tip, enclosing the filling completely. Place bites on a parchment-lined baking sheet.
  4. Brush and Bake: Lightly brush each bite with melted butter. Bake for 12-15 minutes or until golden brown and puffy. Let cool slightly before serving.
