Ingredients

Scale

Main Ingredients

  • 1 lb lean ground turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup chopped bell peppers (any color)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 tablespoon taco seasoning blend
  • 1 cup black beans, drained and rinsed
  • 2 tablespoons olive oil

For Pico de Gallo

  • 1 cup fresh chopped tomatoes
  • ¼ cup finely chopped onion
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon fresh lime juice

For Guacamole

  • 2 ripe avocados, mashed
  • 1 tablespoon fresh lime juice
  • Salt and pepper, to taste
  • Optional: minced garlic or diced onion for seasoning

Optional Toppings

  • Shredded cheese (e.g., cheddar or cotija)
  • Chopped fresh cilantro
  • Sliced jalapeños

Instructions

  1. Prepare the Aromatics: Heat olive oil in a large skillet over medium heat, then sauté diced onions and minced garlic until fragrant and translucent, about 2-3 minutes.
  2. Brown the Turkey: Add ground turkey to the skillet, breaking it up with a spatula; cook until no longer pink and starting to brown, roughly 5-7 minutes.
  3. Add Peppers and Seasoning: Stir in chopped bell peppers and taco seasoning blend, coating the turkey evenly. Cook for another 2-3 minutes until the peppers soften and flavors meld.
  4. Incorporate Tomatoes and Beans: Pour in diced tomatoes and black beans, stirring gently. Let the mixture simmer for 5 minutes, allowing liquid to reduce and flavors to combine.
  5. Assemble and Serve: Remove from heat and top with fresh pico de gallo and a generous scoop of guacamole. Optionally, sprinkle with cheese or fresh cilantro for a finishing touch.

Notes

  • Use freshly ground cumin and chili powder for more vibrant flavor than pre-mixed taco seasoning blends.
  • Do not overcook the turkey—remove from heat as soon as it’s cooked through to keep it moist.
  • Prepare pico de gallo fresh just before serving to maintain its crispness and brightness.
  • A squeeze of lime juice at the end enhances the acidity, lifting both pico and guacamole flavors.
  • Keep guacamole slightly chunky for a better texture contrast.
