Ingredients

Scale

Sushi Rice

  • 2 cups short-grain sushi rice
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt

Salmon Topping

  • 8 oz sushi-grade fresh salmon, chopped into bite-sized pieces
  • 3 tbsp mayonnaise
  • 12 tsp sriracha or spicy mayo (adjust to taste)
  • 1 tsp furikake seasoning

Additional Toppings & Garnishes

  • Furikake seasoning (for sprinkling)
  • 1 tbsp sesame seeds
  • 2 green onions, chopped
  • Masago (optional)
  • Nori sheets (for serving)
  • Optional: masago, sesame seeds, avocado slices

Instructions

  1. Prepare the Sushi Rice: Rinse 2 cups of sushi rice under cold water until the water runs clear to remove excess starch. Cook the rice according to package instructions, ideally using a rice cooker. Once cooked, transfer to a large bowl and gently fold in a mixture of 2 tablespoons rice vinegar, 1 tablespoon sugar, and 1 teaspoon salt to perfectly season the rice.
  2. Prepare the Salmon Layer: While the rice is cooking, chop 8 oz of fresh sushi-grade salmon into bite-sized pieces. In a bowl, mix the salmon with 3 tablespoons mayonnaise, 1-2 teaspoons sriracha or spicy mayo (adjust to your preferred heat level), and 1 teaspoon furikake seasoning to create a flavorful topping mixture.
  3. Assemble the Sushi Bake: Grease a baking dish and evenly spread the prepared sushi rice into the dish, pressing down firmly to create a compact base. Layer the salmon mixture evenly over the rice. Sprinkle additional furikake seasoning and 1 tablespoon sesame seeds on top for added flavor and color.
  4. Bake Until Golden: Preheat your oven to 375°F (190°C). Bake the assembled dish for 15-20 minutes, or until the top is lightly browned and bubbly. This melds the flavors and gives the salmon topping a warm, creamy texture.
  5. Add Final Touches and Serve: Allow the sushi bake to rest for a few minutes after baking. Garnish with chopped green onions and optional masago. Serve portions with nori sheets on the side for wrapping or eating alongside.

Notes

  • Use sushi-grade salmon for safety and best texture.
  • Gently fold vinegar mixture into rice to keep it fluffy and grains intact.
  • Press rice firmly into the baking dish to help the bake hold together.
  • Watch baking time to avoid drying out the salmon topping.
  • Adjust the spiciness by varying sriracha or adding wasabi.
