  • 1 tablespoon maple syrup or agave syrup

Jam Layer

  • 2 tablespoons fruit jam (raspberry, strawberry, apricot, blueberry, or cherry)

Instructions

  1. Prepare the Chocolate Base: Melt the vegan chocolate chips with one teaspoon of coconut oil in a double boiler or microwave in short bursts, stirring frequently until the mixture is smooth and glossy, ensuring a shiny and well-set chocolate coating.
  2. Coat the Cup Molds: Using a spoon or brush, evenly coat the inside of small silicone or paper-lined muffin cups with a layer of melted chocolate to create the outer shell. Place the molds in the refrigerator to chill for 10 minutes until the shell firms up.
  3. Mix the Peanut Butter Filling: In a bowl, combine creamy peanut butter with a splash of maple syrup or agave and mix until smooth and slightly sweetened, forming the luscious center of the chocolate cups.
  4. Layer the Filling and Jam: Spoon a small amount of peanut butter filling into each chocolate-lined shell, then add a dollop of your chosen fruit jam on top to create a delightful creamy and fruity contrast.
  5. Seal and Chill: Cover the peanut butter and jam layers with more melted chocolate to seal the cups. Return the molds to the refrigerator for at least 30 minutes until fully set. Once firm, gently remove the cups from the molds and enjoy.
