Ingredients

Scale

Main Ingredients

  • 2 medium fresh zucchinis, thinly sliced (about 1/4-inch thick)
  • 1/2 cup tomato sauce (smooth and lightly seasoned)
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves (about 10-12 leaves)
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder (or 1 clove minced garlic)
  • Salt, to taste
  • Black pepper, to taste

Optional Toppings

  • Cherry tomatoes, halved
  • Red pepper flakes
  • Grated Parmesan cheese
  • Sliced jalapeño peppers
  • Cooked chicken or turkey pepperoni
  • Chickpeas

Instructions

  1. Prepare the zucchini slices: Wash and dry the zucchinis thoroughly. Slice them into thin, even rounds about 1/4-inch thick to ensure even cooking and the ideal texture when baked.
  2. Preheat and season: Preheat your oven to 425°F (220°C). Arrange the zucchini slices on a baking sheet lined with parchment paper. Lightly brush each slice with olive oil, then sprinkle with salt, black pepper, and garlic powder for added flavor.
  3. Roast the zucchini: Place the baking sheet in the preheated oven and roast the zucchini slices for approximately 10 minutes. They should soften slightly but remain firm, which helps reduce moisture and create a sturdy base for toppings.
  4. Add tomato sauce and toppings: Remove the baking sheet from the oven. Spread a small spoonful of tomato sauce over each zucchini round. Top each with shredded mozzarella cheese and 1 or 2 fresh basil leaves. Add any optional toppings as desired.
  5. Bake to melt and finish: Return the baking sheet to the oven and bake for another 8-10 minutes until the cheese has melted and started to bubble, and the basil releases its aroma. Watch carefully to avoid burning.
  6. Serve and enjoy: Once baked, remove from the oven and let the zucchini pizzas cool slightly. Optionally drizzle with a little more olive oil and garnish with extra fresh basil leaves. Serve warm.

Notes

  • Pat zucchini slices dry with paper towels before roasting to reduce moisture and avoid sogginess.
  • Add fresh basil just before the final bake or use as a garnish afterward to preserve its bright flavor.
  • Slice zucchini evenly and thinly for consistent cooking and stronger bases.
  • Keep toppings light to prevent sogginess and maintain balance in each bite.
  • Use high-quality mozzarella or fresh mozzarella for better melting and richer taste.
