Ingredients

Scale

Proteins

  • 1 lb fresh or thawed peeled shrimp
  • 8 oz andouille sausage, sliced

Alfredo Sauce

  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 2 tbsp butter

Seasonings

  • 2 tsp Cajun seasoning (adjust to taste)
  • Salt, to taste
  • Black pepper, to taste

Pasta & Garnish

  • 12 oz fettuccine pasta
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prepare the pasta: Bring a large pot of salted water to a boil and cook the fettuccine according to package instructions until al dente. Drain, reserving about half a cup of pasta water, then set aside.
  2. Cook the sausage and shrimp: In a large skillet over medium-high heat, sauté sliced andouille sausage until slightly crisp and browned, about 3-4 minutes. Remove sausage and set aside. In the same skillet, add peeled shrimp tossed with Cajun seasoning and cook until pink and opaque, roughly 2-3 minutes per side. Remove and set with the sausage.
  3. Make the Alfredo sauce: Lower the heat to medium, melt butter in the skillet, then add minced garlic and sauté until fragrant, about 30 seconds. Pour in heavy cream and bring gently to a simmer. Stir in grated Parmesan cheese slowly, whisking continuously until smooth. Season with salt, pepper, and extra Cajun seasoning to taste.
  4. Combine everything together: Add the cooked pasta, shrimp, and sausage back into the skillet with the sauce. Toss everything together, using reserved pasta water if needed to loosen the sauce and coat the pasta evenly.
  5. Garnish and serve: Sprinkle chopped fresh parsley on top for color and freshness. Serve immediately while creamy and warm for the best experience.

Notes

  • Use fresh shrimp when possible for the juiciest, most flavorful result.
  • Cook shrimp just until pink to avoid rubbery texture.
  • Season shrimp and sausage well with Cajun spice before cooking to maximize depth of flavor.
  • Save starchy pasta water to adjust sauce consistency and help bind ingredients.
  • Grate Parmesan fresh for better melting and more flavor than pre-grated cheese.
