Instructions

  1. Cook the Bacon: Fry the bacon in a large pot over medium heat until crisp and golden. Remove the bacon strips and set aside on paper towels to drain, keeping the rendered bacon fat in the pot.
  2. Sauté Aromatics: Add chopped onions and minced garlic to the bacon fat and cook for 3-4 minutes until softened and fragrant, building the soup’s base flavor.
  3. Add Potatoes and Broth: Pour in the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are very tender.
  4. Blend and Season: Mash some of the potatoes in the pot using a potato masher or immersion blender to create creaminess while leaving some chunks. Stir in ranch seasoning, salt, and pepper to brighten the flavor.
  5. Finish with Cheese and Cream: Lower the heat to low and stir in the shredded cheddar cheese and milk or cream until melted and smooth. Avoid boiling after adding cheese to prevent curdling.
