Soup Base
- 4 cups peeled and diced starchy potatoes (Russet or Yukon Gold)
- 4 cups chicken broth or stock
- 1 cup milk or cream
- 4–5 slices of bacon
- 1 medium onion, chopped
- 2–3 cloves garlic, minced
Seasoning and Cheese
- 2 teaspoons ranch seasoning
- 1 to 1½ cups shredded sharp cheddar cheese
- Salt and pepper to taste
Optional Garnishes
- Chopped chives
- Extra shredded cheddar cheese
- Sour cream
- Crispy bacon bits
- Cook the Bacon: Fry the bacon in a large pot over medium heat until crisp and golden. Remove the bacon strips and set aside on paper towels to drain, keeping the rendered bacon fat in the pot.
- Sauté Aromatics: Add chopped onions and minced garlic to the bacon fat and cook for 3-4 minutes until softened and fragrant, building the soup’s base flavor.
- Add Potatoes and Broth: Pour in the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are very tender.
- Blend and Season: Mash some of the potatoes in the pot using a potato masher or immersion blender to create creaminess while leaving some chunks. Stir in ranch seasoning, salt, and pepper to brighten the flavor.
- Finish with Cheese and Cream: Lower the heat to low and stir in the shredded cheddar cheese and milk or cream until melted and smooth. Avoid boiling after adding cheese to prevent curdling.
- Serve and Garnish: Ladle the soup into bowls and top with crispy bacon pieces and desired garnishes like chives or extra cheese.
Notes
- Use starchy potatoes like Russet or Yukon Gold for creamy texture.
- Don’t overblend – keep some potato chunks for texture.
- Add cheese only at low heat to avoid clumping.
- Rinse diced potatoes before cooking to reduce excess starch.
- Cook aromatics in bacon grease for smoky depth.
