  • 1 cup fresh spinach, chopped (or thawed and drained frozen spinach)
  • 1 cup artichoke hearts, drained and chopped (canned or jarred)
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Prepare the Filling: In a bowl, combine softened cream cheese, chopped spinach, drained and chopped artichoke hearts, minced garlic, shredded mozzarella, salt, and pepper. Mix thoroughly until well incorporated.
  2. Prepare the Chicken: Using a sharp knife, carefully create a pocket in each chicken breast by slicing horizontally but not all the way through. Season the chicken inside and out with salt and pepper.
  3. Stuff the Chicken: Fill each pocket generously with the spinach and artichoke mixture, then secure with toothpicks if necessary to keep the filling inside during cooking.
  4. Sear the Chicken: Heat olive oil in a skillet over medium-high heat and sear the stuffed breasts for 3 to 4 minutes on each side until golden brown to lock in juices and develop flavor.
  5. Bake Until Done: Transfer the seared chicken breasts to a baking dish, sprinkle grated Parmesan over the top, and bake in a preheated oven at 375°F (190°C) for 20 to 25 minutes until the chicken is fully cooked and the cheese is bubbly.
