Ingredients

Scale

Mushrooms & Vegetables

  • 8 oz cremini or button mushrooms, sliced
  • 1/3 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, finely chopped
  • 1 shallot, finely chopped

Herbs & Cheese

  • 1 tsp fresh thyme leaves
  • 2 tbsp fresh parsley, chopped
  • 1/2 cup freshly grated Parmesan cheese

Dairy & Oils

  • 1 cup heavy cream or cashew cream
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter

Pasta

  • 8 oz pasta of choice (fettuccine, linguine, or penne)

Instructions

  1. Prepare the ingredients: Slice the mushrooms evenly to ensure they cook uniformly. Finely chop the garlic and shallot to release their bright, aromatic flavors into the sauce.
  2. Sauté mushrooms and aromatics: Heat olive oil and butter in a skillet over medium heat. Add the mushrooms, garlic, and shallots. Cook until the mushrooms release their moisture and turn golden brown, about 7-10 minutes.
  3. Add sun-dried tomatoes and herbs: Stir in chopped sun-dried tomatoes and fresh thyme leaves. Let their flavors infuse the mushrooms for 2-3 minutes.
  4. Pour in cream and simmer: Lower the heat, gradually add the heavy cream, and let the sauce simmer gently until it thickens and becomes creamy, about 5 minutes.
  5. Combine with pasta and cheese: Mix the cooked pasta into the sauce, tossing to coat every strand. Stir in freshly grated Parmesan cheese and chopped parsley for brightness.
  6. Season and serve: Adjust salt and pepper to taste. Serve hot, garnished with extra herbs or cheese as desired.

Notes

  • Use fresh mushrooms for the best texture and flavor.
  • Don’t overcrowd the pan to avoid steaming; sauté mushrooms in batches if needed.
  • Reserve some pasta water to loosen the sauce if it becomes too thick.
  • Grate Parmesan cheese fresh for optimal melt and flavor.
  • Finish the dish with fresh herbs to keep their bright, impactful taste.
