  • 1 tbsp olive oil, plus extra for searing
  • Salt and pepper, to taste
  • 2 tbsp fresh parsley or thyme, chopped

Instructions

  1. Prepare the Potatoes: Wash and cut the potatoes into even-sized pieces so they cook evenly. Parboil them briefly or microwave for a few minutes until just tender, then set aside.
  2. Season and Sear the Steak: Pat your steak dry and season generously with salt and pepper. Heat olive oil in your skillet over medium-high heat and sear the steak for 3-4 minutes per side for medium-rare, adjusting time based on thickness. Remove and rest on a plate.
  3. Cook the Potatoes Until Crispy: In the same skillet, add a bit more olive oil or butter and toss in the potatoes. Stir occasionally, letting them develop a golden-brown crust, which takes about 10-12 minutes.
  4. Make the Garlic Butter Sauce: Reduce heat to medium-low and add butter to the potatoes; once melted, stir in minced garlic. Let it cook for 1-2 minutes until fragrant, careful not to burn the garlic.
  5. Combine and Finish: Slice the rested steak into strips and return to the skillet, tossing gently with the potatoes and garlic butter. Add fresh herbs and adjust seasoning before serving hot.
