Ingredients

Scale

Dough Ingredients

  • 2 ½ cups All-Purpose Flour
  • 2 tbsp Cocoa Powder
  • ½ cup Granulated Sugar
  • 2 ¼ tsp Active Dry Yeast (1 packet)
  • ¾ cup Buttermilk, warmed
  • 3 tbsp Butter, melted
  • 2 large Eggs
  • 1 tsp Salt
  • 1 tbsp Red Food Coloring
  • 1 tsp Vanilla Extract

Filling Ingredients

  • ½ cup Butter, softened
  • 1 cup Brown Sugar
  • 2 tbsp Ground Cinnamon

Cream Cheese Frosting Ingredients

  • 4 oz Cream Cheese, softened
  • 3 tbsp Butter, softened
  • 1 ½ cups Powdered Sugar
  • 1 tsp Vanilla Extract

Instructions

  1. Prepare the Dough: Warm the buttermilk and butter until lukewarm, then dissolve the active dry yeast in this mixture. In a large bowl, whisk together the all-purpose flour, cocoa powder, granulated sugar, salt, and red food coloring. Add the yeast mixture, eggs, and vanilla extract, mixing until a sticky dough forms. Knead gently on a floured surface until smooth and elastic. Place the dough in a lightly greased bowl, cover, and let it rise in a warm spot until doubled in size, about 1 to 1.5 hours.
  2. Make the Filling: While the dough is rising, combine the softened butter, ground cinnamon, and brown sugar in a bowl. Mix well to create a silky cinnamon filling. Adjust the cinnamon amount for desired spice intensity. Set aside.
  3. Roll Out and Assemble: Once the dough has risen, roll it out on a lightly floured surface into a 12 by 18 inch rectangle. Evenly spread the cinnamon filling over the surface, leaving a small border around the edges. Starting from the longer side, carefully roll the dough into a tight log and seal the edge with a little water.
  4. Slice and Proof: Using a sharp knife or dental floss, cut the rolled dough into 12 even slices. Place the slices in a greased baking dish, leaving space between each roll. Cover and let them proof for another 30 to 45 minutes until puffy.
  5. Bake to Perfection: Preheat the oven to 350°F (175°C). Bake the rolls for 25 to 30 minutes until they turn golden and are cooked through but still soft. Avoid overbaking to maintain tenderness.
  6. Prepare the Cream Cheese Frosting: In a mixing bowl, beat together softened cream cheese, softened butter, powdered sugar, and vanilla extract until smooth and creamy. Spread the frosting generously on the warm rolls to finish.

Notes

  • Use fresh yeast for best rising results; ensure it’s bubbly before mixing.
  • Keep buttermilk and butter lukewarm to avoid killing yeast.
  • Knead dough gently until elastic to avoid dense rolls.
  • Use dental floss or a serrated knife for smooth, even slices.
  • Allow dough to rise in a draft-free, warm spot for fluffiness.
  • Apply cream cheese frosting while rolls are warm for better absorption.
