Ingredients

Scale

Chicken and Filling

  • 4 boneless, skinless chicken breasts
  • 8 slices of sliced ham (or turkey slices for variation)
  • 8 slices of Swiss cheese (or Gruyère or mozzarella as alternatives)

Topping

  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 3/4 cup panko breadcrumbs (or gluten-free breadcrumbs/nuts for gluten-free option)
  • 1/4 cup grated Parmesan cheese

Seasonings

  • Additional salt and pepper to taste

Instructions

  1. Prepare the chicken breasts: Carefully slice each chicken breast horizontally to create a pocket or butterfly it open, being careful to keep the edges intact for stuffing.
  2. Stuff the chicken: Layer 2-3 slices each of ham and Swiss cheese inside each chicken breast. Fold or close the breasts securely and use toothpicks if needed to hold the filling in place during baking.
  3. Mix the topping: In a bowl, combine mayonnaise, Dijon mustard, garlic powder, salt, panko breadcrumbs, and grated Parmesan cheese to create a creamy, crunchy crust mixture.
  4. Assemble in a baking dish: Place the stuffed chicken breasts in a greased baking dish. Spread the mayonnaise-breadcrumb mixture generously and evenly on top of each breast for a golden finish.
  5. Bake to perfection: Bake in a preheated oven at 375°F (190°C) for 25 to 30 minutes or until the chicken is cooked through (internal temperature 165°F / 74°C) and the topping is bubbly and golden brown. Let rest for 5 minutes before serving to lock in the juices.

Notes

  • Use thin chicken breasts or pound thick ones evenly for uniform cooking.
  • Secure fillings inside the chicken with toothpicks to prevent leakage.
  • Don’t overstuff to avoid filling spilling out during baking.
  • Monitor baking time closely and use a meat thermometer to ensure doneness.
  • Letting the bake rest after cooking helps juices redistribute and keeps chicken juicy.
  • For gluten-free, substitute panko breadcrumbs with gluten-free breadcrumbs or chopped nuts.
  • To reheat leftovers, warm in oven at 350°F (175°C) for 15-20 minutes to keep topping crispy.
