Ingredients

Scale

Meatballs

  • 1 lb lean ground beef, lamb, turkey, or chicken
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh mint, chopped
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp olive oil (for cooking)

Veggies

  • 1 cup cucumber, thinly sliced or diced
  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, thinly sliced

Tzatziki Sauce

  • 1 cup Greek yogurt
  • ½ cup grated cucumber, excess water squeezed out
  • 1 clove garlic, minced
  • 1 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • Salt, to taste
  • Black pepper, to taste

Base Grains

  • 1 cup quinoa or rice, cooked according to package instructions

Additional

  • 1 tbsp lemon juice (for finishing)
  • Fresh herbs for garnish (parsley, mint, or dill)

Instructions

  1. Prepare the Meatballs: In a large bowl, combine ground meat with minced garlic, chopped parsley and mint, oregano, cumin, salt, and pepper. Mix gently until evenly combined, being careful not to overwork the mixture to keep meatballs tender.
  2. Shape and Cook the Meatballs: Form the mixture into small, golf ball-sized meatballs. Heat olive oil in a skillet over medium heat and cook the meatballs for 8-10 minutes, turning occasionally to brown all sides and ensure they are cooked through.
  3. Prepare the Veggies and Grains: While the meatballs are cooking, wash and chop cucumber, cherry tomatoes, and red onion. Cook quinoa or rice according to package instructions to create a fluffy base for your bowl.
  4. Make the Tzatziki Sauce: In a small bowl, whisk together Greek yogurt, grated and squeezed cucumber, minced garlic, fresh dill, lemon juice, salt, and pepper to prepare a creamy and tangy sauce.
  5. Assemble Your Bowl: Start with a base of cooked grains, arrange the meatballs on top, scatter the fresh vegetables around, and generously drizzle with tzatziki sauce. Finish with a squeeze of lemon juice and sprinkle fresh herbs for brightness.

Notes

  • Use fresh parsley and mint to elevate the flavor and freshness of the meatballs.
  • Avoid overmixing the meat mixture to keep meatballs tender and juicy.
  • Properly brown the meatballs to develop a flavorful crust and prevent crumbling.
  • Remove excess water from cucumber before adding it to tzatziki to avoid a watery sauce.
  • Let cooked meatballs rest a few minutes before serving to lock in juices.
